a good day for soup.

pumpkin and squash soup
it’s monday, and i’m already looking forward to next weekend, because maybe, just maybe, i’ll get all of the things on my to-do list crossed off. i was constantly doing/raking/working over the weekend, and i still only accomplished about half of the list. i cannot catch up. sigh.

but i did make soup! a good, hearty, easy, yummy soup. jenn knows how much i love squash soup, and she sent me to this recipe for pumpkin and butternut squash soup. a big bowl is all i need to help me chill out and forget about the to-do list.

aaaah soup! well, you could be hitting the bottle so I reckon you’ll be fine, right? (nah, seriously, it looks delish.)

to do lists are evil. mine grows at night, I’m telling you (direct opposite of the shoemaker and the elves story; they bloody add things up at night, my elves, I’m sure. the bastards. ;)

Yum! Screw the to-do list. What needs to get done gets done. Everything else can wait.

I tried the most amazing soup at a friend’s house recently and tried making it myself. It is Beetroot and coconut. I used an onion, 5 beetroots, 1 small carrot, 1 small parsnip and some stock. When it’s finished cooking add creamed coconut and blend the lot together.
    It was great for halloween!
